Easy and Delicious Super Bowl Snack and Drink Recipes

It’s game time! Gather ‘round this Sunday for the 47th Super Bowl, a face-off between the San Francisco 49ers and the Baltimore Ravens (or, if you’re like me, a face-off between my cooking skills and the kitchen).

Whether you’re going to be tuning into the TV this Sunday for the football game, the commercials, or you’re just there to hang out with friends, this is a perfect excuse to try out that Pinterest recipe you’ve had your eyes on.

But sometimes those recipes can be a bit ambitious for the everyday cooker, so here are a few fool-proofed ideas for game-time bites this weekend. The key is to keep it simple and bite-sized! Chips and dip is a great combo to fill up a plate, and finger food is just too easy to pop in your mouth for something yummy.

And don’t worry if your favorite team loses, or if you don’t even have a favorite team, you can score big points with these tasty snacks!

Classic Guacamole

What’s more American than football and guacamole? Well, maybe a few things, but with this quick and easy recipe, you’ll start off the party with a bang!

Ingredients
3 avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon salt
1/2 medium onion, diced
2 tomatoes
1 tablespoon chopped cilantro
1 clove garlic, minced

Hint: I like using a chunky tomato and onion salsa in my guacamole because it can replace the individual tomatoes and onion. It’s already chopped for you, and it usually includes cilantro too!

Directions
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, jalapeno, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

Coconut Sweet Potato Dip

Just because it’s a Super Bowl party doesn’t mean that you have to eat super unhealthy. Try out this lighter dip option that’s low on the calories but big on taste.

2/3 cup hummus
2/3 cup sweet potato, mashed
2/3 cup plain Greek yogurt
2 Tbsp shredded coconut, unsweetened (optional)

Directions
Mix together hummus, mashed sweet potato, and Greek yogurt.  Scoop into serving bowl.  Sprinkle coconut over the top.  Serve with blue corn tortilla chips, sweet potato chips, normal tortilla chips, veggies, veggie chips, or just a spoon!

Homemade Chicken Wings

You can’t go wrong with good, traditional chicken wings. Not only will people be blown away by the taste, but you can brag that you made them yourself!

Ingredients
2-3 lbs wings, fresh or frozen (thawed)
1/2 cup Frank’s Red Hot Sauce
1/4 cup butter, melted
2 cloves garlic, minced
1 large onion, quartered
1 small red pepper
peanut or vegetable oil, for frying

Directions
Prepare sauce. Melt butter, add minced garlic. Simmer over very low heat for 3-5 minutes. Stir in hot sauce. Keep warm.
Wash and dry wings (thaw first, if frozen). Heat oil to 375°F. Add hot pepper and quartered onion to flavor the oil. Remove, using a slotted spoon, when browned.
Fry wings until crispy, turning once, about 3 or 4 minutes, depending on size of wings. Remove and drain on paper towels.
Add to saucepan with hot sauce mixture. Simmer on low heat for 5 minutes.
Serve accompanied with celery sticks cut into 4 inch lengths and filled with a mixture of half blue cheese and half cream cheese, with a pinch of celery seed (optional).
A bowl of the remaining hot sauce mixture can be provided to each guest for dipping.

Mac and Cheese Cupcakes

This takes bite-sized to the next level. With this scrumptious option, you get all the comfort of old-fashioned mac and cheese and the tip of your fingers in one personal serving! The only bad thing about these is how tempting it is to just keep eating them…

Ingredients
1/2 pound elbow macaroni
4 ounces diced velvetta cheese
1/2 cup shredded cheddar
3 Tablespoons milk (I used 2%)
1/2 cup bread crumbs or cracker crumbs

Directions
Preheat the oven to 350 degrees F
Cook pasta according to package directions.  Drain.
In saucepan, combine melt cheeses and milk and cook until melted.
Stir pasta into melted cheese.
Scoop into greased muffin tins with an ice cream scoop.
Sprinkle with bread crumbs.   (I used whole wheat bread crumbs.)
Bake 20 minutes at 375.  Let cool in pan for at least 15 minutes.
Use a knife around edges to loosen cupcakes from tin.  Scoop cupcakes out with a spoon.  If the cupcakes start to fall apart after they are removed, you can put them in paper cupcake liners to serve.

Meatball Sliders

Simple, yet sophisticated. These sliders bring together the best parts of a burger and a meatball sub into one bite that you can pop into your mouth. It looks fancy, but it’s super easy to make!

Ingredients

24 frozen meatballs, thawed
2 cups marinara sauce
8 ounces sliced provolone or mozzarella
2 Tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasonings
24 dinner rolls or 8 hot dog buns cut in thirds

Directions
Preheat oven to 400 degrees. Line a 9X13 pan with foil and spray with cooking spray.
Warm the meatballs in the marinara sauce in a saucepan over medium heat. Separate the dinner rolls or hot dog buns and place one saucy meatball on the bottom roll. Top with mozzarella or provolone. Place the top roll on and push down slightly. Place meatball slider in the pan and continue to assemble the rest of the sliders.
Microwave butter in a bowl in the microwave until melted. Add garlic powder and Italian seasonings and mix well. Brush tops of buns with melted butter mixture.
Toast in oven for 8-10 minutes or until toasted. I personally like mine a little more on the soft side…not so toasty.

1 10-ounce package of regular marshmallows
4 cups of miniature marshmallows
1/2 cup of peanut butter

Patriotic Non-Alcoholic Drink

No matter who wins, we are all united under the common love of American sports! So why not show that love with a red, white and blue beverage for the game? The trick to making the fancy layered drink is to use liquids with different amounts of sugar. Pour them into a tall glass, and you’ve created American artwork!

Ingredients:
Red fruit punch or juice (i.e. cranberry juice)
Blue Gatorade
Diet 7Up, Sprite, or other clear soda (must be diet or sugar free!)

Directions:
Begin with the red juice and pour some into the bottom of the glass. Next, slowly pour in the next layer of blue Gatorade. Finally, gently add the top layer of the clear beverage on top to fill the glass.
