Most of us don’t have the energy to cook a full breakfast in the mornings. Even though we work from home now, there never seems to be enough time to ensure you start the day with a wholesome meal. My go-to for mornings when I don’t want to get out of bed is granola, and if you are anything like me, you likely go through several boxes every month. Granola, especially the good stuff, is expensive, and so I set out to find a granola recipe that is cheap, nutritious, and delicious. The batch below usually lasts me a bit over a week, though you can double the recipe if you want. While some of the ingredients (dried fruits, nuts, etc.) are somewhat expensive, you can buy them in bulk, and save money in the long run.
Ingredients:
- 3 cups of oats
- 1 cup of honey
- Seeds, nuts, dried fruit, etc. of your preference
Instructions:
1. Combine 3 cups of oats (I use large, whole oats), 1 cup of honey, and a combination of whatever seeds, nuts, and dried fruits you like in a large bowl. Stir until combined.
2. Cover a baking tray with parchment paper and put the granola mix on it. Spread out to ensure even baking.
3. Bake in the oven for approximately 15 minutes at 160°C. About halfway through, use a spatula to turn over some of the granola pieces so that both sides get baked.
4. Let cool before storing the granola in a jar or container. It can be kept either in the fridge or cupboard.
Tip: If you have a bit more money to splurge on more ingredients, I usually add dried banana chips, sunflower and pumpkin seeds, dried cranberries, almonds, walnuts, and raisins ? Enjoy!
