Monday
You blink open your eyes. A little groggy. Better search out caffeine first.
Whipped coffee
Spoonful of instant coffee
Spoonful of sugar
Healthy splash of boiling water
Milk (coconut or almond are my favorites for this)
Ice
- In a medium-sized bowl, combine equal proportions of all three ingredients and whisk for about five minutes or until soft peaks form in the mixture.
- Put a few ice cubes in a cup and cover with the milk of choice.
- Spoon in the whipped coffee and stir until mostly mixed.
- Enjoy!
Now time for sustenance.

Egg Sandwich
One egg
One English muffin
Half a handful of spinach
Sliced turkey breast
Slice of cheese
Oregano
Salt
Pepper
- Start by toasting the English muffin and heating up a pan on the stove to medium heat.
- Sauté the spinach until almost wilted and warm the turkey breast in the pan.
- Centralize the spinach and crack the egg over top. Season with oregano, salt and pepper.
- After the egg white begins to firm, place the slice of cheese and the top half of the English muffin over the yolk.
- Load the bottom half of the muffin with the turkey breast.
- Remove once the egg is moveable without breaking and sandwich everything on a plate.
- Nibble away!

Tuesday
A long day ahead requires fuel. Good thing you prepared this Monday night.

Chia Pudding
Chia seeds
Milk
Honey
Fresh Fruit (I like strawberries and blackberries in this)
- Pour half a cup of milk into a mason jar and spoon in two to three tablespoons of chia seeds.
- Stir and let it settle for a few minutes, then stir again.
- Don’t put the lid on and let it chill until there is no more separation of the chia seeds in the milk (you’ll know if it’s separating when you see it).
- Drizzle and stir in a little bit of honey right before putting the jar in the fridge.
- Let sit overnight or up to seven days.
- Take it out, top with more honey, and add in your fresh fruit!
- Feel the love and eat up!

Wednesday
Hump day is basically asking for bacon, right?
Â
Bacon and Cheese Oven Omelet
Oven-safe pan
Applewood Smoked Bacon
Three eggs
Splash of milk
Handful of Sharp Cheddar
Spoonful of Coconut oil
Salt
Pepper
Garlic powder
Onion Powder
- First things first, preheat the oven to 375.
- Fully cook and chop the bacon into bits. Save the pan you just used, just pour out the bacon grease!
- Whisk together the eggs and spices with the milk until nice and creamy.
- Oil the still warm bacon pan and grease with coconut oil (or nonstick spray).
- Pour in the eggs, sprinkle in the bacon, and cover it all with the cheese. Add an extra pinch of salt on top for good measure.
- You can also add more sautéed veggies if you’d like. Maybe bell peppers, spinach, and avocado.
- Stick the oven-safe pan into the oven and set a timer for 8 minutes.
- Check regularly and remove when the middle no longer is liquidy.

Fresh banana
- In a blender, combine a large spoonful or two of cacao powder and an equal amount of protein powder, two to three tablespoons of peanut butter, the chopped frozen banana, and just enough milk to make the blender work its magic.
- Blend.
- If it isn’t thick enough, add a handful of ice and blend again.
- Pour into a bowl and top with some cacao powder, banana slices, dash of peanut butter, and chopped nuts.
- Heaven and happiness in a bowl!

Friday
Basically, brunch all day.
Â
Sweet Crepes
1c flour
1c milk
3 large eggs
2tsp bakers sugar
2tbs melted butter
Splash of vanilla extract
- Whisk together all ingredients in a large bowl until there are no lumps and it is a smooth consistency.
- Place in the fridge for 30min-1hour to allow the bubbles to disperse and help the batter not to tear.
- Heat a flat pan or crepe pan to medium/medium-low heat.
- Coat pan with butter and add around an ounce or two of batter to the pan and gently swirl the pan around until the batter forms a nice circle.
- Cook for 25-30 seconds then flip.
- Cook for another 10 seconds and remove to a cutting board or plate.
- Repeat this process taking care not to over grease the pan until all the batter is gone.
