You know what they say, “Breakfast is the most important meal of the day!” Finals week is on the horizon, so I wanted to share some of my favorite meals to start the morning.
- Avocado Toast

This is no surprise, avo toast is very versatile, well nutritionally balanced and absolutely delicious. Recently, I have been really into topping my avocado toasted with a fried egg for extra protein to keep me filled throughout classes. Another way you can top it would be with sliced tomatoes and garlic salt, I like this version as a refreshing snack. For even more health benefits, I tend to use multi-grain bread or seeded bread.
- Yogurt

This literally takes maybe 3 minutes to make and is packed with proteins and vitamins. First, you take Greek yogurt (either unflavored or vanilla), then you add chia seeds, granola, and honey. I like to use local honey because it is known to help with allergies! If desired, add any form of chopped up fruit to add more flavor and daily fruit intake.
- Smoothies

Embrace the many ways you can create a smoothie- throw whatever you have on hand into a blender and enjoy! My favorite smoothies consist of frozen mango, pineapple, strawberries, couple handfuls of spinach or kale, chia seeds, and almond milk.
- Egg White Cups

I watched a video of this on Buzzfeed Tasty (I am aware I’m obsessed) and was instantly in the kitchen. There are so many ways to create these to your taste buds. I believe it is better to make these the night before and reheat them in the morning. First, you’re going to preheat the oven to 375 degrees. Then take a muffin tin, add chopped veggies (I like spinach, mushroom, and broccoli), then add the egg whites. Season generously with garlic salt and pepper. Add shredded cheese if desired. Bake for about 16 minutes & then enjoy! Pro tip: eat them topped with salsa and avocado.
- Breakfast Burrito

This recipe takes a bit more time, but it is so worth it. Sautee some veggies in a pan with coconut oil or butter, whichever you prefer, then add in whisked eggs. Cook until desired consistency then take it off of heat & place onto a plate or bowl. Next, grab a tortilla and place it into the pan and flip so both sides are kind of toasty. Then add cheese and get it melty, then the egg and veggie mixture and remove from pan. Roll the burrito by folding in the top and bottom, one side over the mixture and roll. Then if you want to go an extra step, add back to the hot pan and crisp up the outside. Voila!
