Love carbs? Try These Vegetables

I love my carbs with two of my favorite foods being rice and pasta. But there have been countless times where after I eat, I get hit by a food coma. To get more energy and eat less carbs, I have been gradually switching to food items made from vegetables. Here are three of my favorite vegetable substitutes for carbs.

 

1. Cauliflower gnocchi

       When made right, this stuff is just like regular gnocchi. A pro tip is to pan fry it, otherwise the gnocchi will turn out mushy. If you want to make your own, here’s a recipe: https://www.simplyrecipes.com/recipes/cauliflower_gnocchi_trader_joes_copycat/

2.  Riced vegetables

            I don’t know why but cauliflower has been killing it, because I love cauliflower rice! I always feel super healthy after eating it. One concern I had when I first started eating cauliflower rice was that it wouldn’t fill me up like regular rice. But to my surprise I actually get super full when I have it and don’t have to deal with the food coma that normally comes when eating rice.

3. Vegetable pastas

             I know I already listed gnocchi above, but I’m talking about zoodles and cucumber spirals. I love making pastas out of veggies because it’s so much fun to use a spiralizer! I love that I can have the satisfaction of eating pasta without feeling bloated. My favorite part is how spiralized zucchini and cucumber can make eating salads more fun.
