Hey everyone! So fall has come and winter is trying to take over. This means the weather is now fluctuating between fall weather and the absence of heat, resulting in wintery cold days with rain. These last few days have been absolutely dreary weather-wise, and sometimes, as humans, we deal with personal matters. So if your insides are as dreary as the outside weather, a good way to cheer up and change the mood is with soup! Whether you make it for yourself, or someone else makes it for you (this way is slightly better because it’s usually made with love) it’s a sure way to cheer you up. Currently, I’ve been dealing with some personal matters, and my lovely roommate saw this. So, being a sweetheart, she made a potato soup that melted the glum mood out of me and started to warm my frozen heart. So here’s what she made.

 

Vondelle’s Modified Loaded potato soup

 

  • 4 Potatoes (about 1 1/2 lb) peeled and diced into 1/2” pieces

  • 1 Yellow Onion, diced

  • 4 Tbsp of All Purpose Flour

  • 4 Tbsp of Unsalted Butter, or dairy free butter

  • 8 Slices of Bacon

  • 3 cups of Chicken Stock

  • 3 cups of Whole Milk, or a dairy alternative like almond/cashew milk

  • 1/2 cup of Sour Cream, or sour cream alternative 

  • 1 1/2 Shredded mild Cheddar to taste, or preferred cheese

  • Carrots and mushrooms

  • Salt and Pepper, to taste

Preparation

1) In a soup pot, cook the bacon until it becomes nice and crispy, about 4 minutes. Remove to a paper towel-lined plate using a slotted spoon and set aside.

 

2) Use the rendered bacon fat to saute the onions, mushrooms, and carrots. Saute until the onion becomes translucent and develops a bit of color. If there is not enough fat, add a little bit of butter. This takes about 4 to 5 minutes.

 

3) Add the flour and stir constantly for 1 minute, add the milk, stock, and potatoes and bring to a simmer. Cook this for about 20 minutes, or until the potatoes are soft.

 

4) Then add the sour cream, cooked bacon, and cheese. Stir everything together and continue to let it cook for 5 more minutes.

 

5) Adjust the seasoning to what you like. When you’re ready to serve, sprinkle the top with some extra cheese.
