This recipe is perfect for parties or even just a night-in watching fall movies. The recipe includes many things that are already in your pantry (and if not, they are most certainly easy to find).
What you need:
250g margarine
2 cups white sugar
2 eggs
2 teaspoons vanilla essence
425g cooked, pureed pumpkin
4 cups plain flour
1 1/2 teaspoons bicarb soda
1 1/2 teaspoons baking power
1 teaspoon salt
1 teaspoon cinnamon
pinch nutmeg
1 cup dark chocolate chips
1 cup walnuts, diced (optional)
powdered sugar (topped to your desired amount)​
The steps to make this delicious cookie consists of four easy steps.
1. Make sure your baking trays are cleaned and greased. Preheat the oven to 375 degrees.
2. In a large bowl, mix margarine and white together until they are smooth and creamy. Add your eggs in, one at a time, and beat them into the mix. Stir in your vanilla and pumpkin until it is all well blended.
3. In a separate bowl, combine your bicarb soda, flour, baking powder, cinnamon, nutmeg and salt. Stir them until they are all mixed together before adding them into the pumpkin mixture. If you desire chocolate chips to your cookies, add them in by teaspoonfuls. The same for walnuts.Â
4. Bake for about 12 to 15 minutes in the oven or until the edges start to turn brown. Once down, pull them out and cool them for a few minutes on the baking trays. You can remove the cookies onto a wire rack to cool completely.
