What’s better than pumpkin spiced lattes and cold fall weather? Well, I’ll tell you that is hard to beat. However, making some yummy fall recipes can top that or even make fall that much better! I searched for some of the best and most yummy recipes to try this fall.

 

Breakfast

Breakfast is one of the most important meals of the day and many wouldn’t think that you can make breakfast seasonal. However, those people are wrong! Here’s some breakfast recipes to try!

Pecan Pie Baked Oatmeal

Vegetarian, Gluten Free – Serves 8-10

Prep Time: 10 minutes/ Cook Time: 20 minutes/ Total Time: 30 minutes

INGREDIENTS

for oatmeal:

  • 2 cups rolled oats
  • 1 tbsp ground flaxseed (optional)
  • 1 tbsp brown sugar
  • 1/4 tsp cinnamon
  • Pinch sea salt
  • 1 tbsp melted butter or coconut oil
  • 1 1/2 cups milk of choice
  • 2 large eggs
  • 1 tsp vanilla

for topping:

  • 2 tbsp butter or coconut oil
  • 2 tbsp brown sugar
  • 6 tbsp pure maple syrup
  • 1 cup pecan halves

Pumpkin Spiced Waffles

Serves 8, 5” Waffles

INGREDIENTS

  • 1/2 cup coconut oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 15 ounces pure pumpkin puree
  • 2 eggs (separated)
  • 1/2 cup whole milk
  • 1 teaspoon McCormick Pumpkin Pie Spice Extract*
  • 1 teaspoon vanilla
  • 1 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped pecans (optional)

Maple Bacon Sweet Potato Hash

Serves 4

Maple Bacon Sweet Potato Hash

Prep Time 10 minutes/ Cook Time 20 minutes​/ Total Time 30 minutes

INGREDIENTS

  • 2 medium sized sweet potatoes
  • 1 lb bacon diced into bite sized pieces
  • 1/2 teaspoon cinnamon
  • 1 Tablespoon maple syrup

Kale and Fall Fruit Salad with Cider Poppy Seed Dressing

Serves 4

Prep Time 15 mins​/ Total Time 15 mins

INGREDIENTS

  • 4 handfuls of baby kale (about 4 cups)
  • 4 figs, quartered
  • 1 ripe pear, cored and cut in thin slices (squeeze the cut pear with lemon juice to prevent browning)
  • 1 cup grapes, halved
  • 1/4 cup dried cranberries
  • 1/4 cup pomegranate seeds
  • 1/2 cup red currants (optional)
  • 1/4 cup crumbled blue cheese
  • 1/4 cup Camembert or Brie, in small wedges or chunks
  • 1/4 cup rough chopped toasted hazelnuts

cider poppy seed dressing

  • 1/4 cup extra virgin olive oil
  • 1/4 cup cider vinegar
  • 1/4 cup cider
  • 1 tsp mustard
  • 1 tsp honey
  • 1 Tbsp poppy seeds
  • pinch salt
  • black pepper to taste

Pumpkin Chicken Chili

Gluten Free – Serves 6

Prep Time 10 mins/ Cook Time 20 mins​/ Total Time 30 mins

INGREDIENTS

  • 2 Tbsp. olive oil
  • 1 cup sweet onion finely diced
  • 1 cup green bell pepper finely diced
  • 1 jalapeno seeded, finely diced
  • 2 cloves garlic crushed
  • 3 cups chicken broth regular
  • 1 ½ pounds chicken breasts
  • 15 ounces pumpkin puree canned
  • 2 Tbsp. tomato paste
  • 15 ounces canned black beans rinsed and drained

Pumpkin Chili Seasonings:

  • 2 tsp. chili powder
  • 1 tsp. cumin
  • ½ tsp. paprika
  • ¼ tsp. ground sage
  • 1 ½ tsp. salt to taste
  • ¼ tsp. pepper to taste
  • Pinch cayenne pepper
  • Pinch cinnamon

Toppings:

  • Green Onions optional
  • Cilantro optional

Dinner

My favorite part of Fall is curling up in a nice warm and fuzzy blanket, with a warm drink and a good movie. If you’re wanting to get the whole family (real or college fam.) around to enjoy each other’s company, use one of the Fall inspired recipes below for dinner.

Chicken Cornbread Casserole

Serves 4

Prep Time 15 mins/ Cook Time 25 mins/ Total Time 40 mins

INGREDIENTS

  • 3 boneless skinless chicken breasts, cut in to cubes OR 2 cups cooked chicken in bite size pieces
  • 1/4 cup diced onions
  • 1/3 cup butter
  • 1 bag frozen mixed vegetables
  • 1/3 cup all purpose flour
  • 2/3 cup milk
  • 1 1/4 cup chicken broth
  • Salt and pepper to taste
  • Cornbread mix (1 large box or 2 small like Jiffy), prepared according to box directions

Butternut Squash & Sausage Stuffed Shells

  • 1 butternut squash, peeled and cubed
  • 1 onion, sliced
  • 3/4 cup milk
  • 3/4 cup vegetable broth
  • 1 pound sausage
  • 2 cups spinach
  • 3 cloves garlic
  • 1 pound jumbo shells, cooked al dente
  • 15 ounces ricotta
  • 1 egg
  • 1/4 cup parmesan, shredded
  • Additional parmesan, shredded
  • Olive oil
  • Salt & pepper

Savory Baked Apples with Sausage Stuffing

INGREDIENTS

  • 1 Tablespoon oil or butter
  • 1 celery stalk, diced
  • 1/4 cup finely diced onion
  • 1/2 package sausage
  • 1 box stuffing mix
  • 1 1/4 cup Swanson’s UNSALTED Chicken Broth (or the same amount of water called for on the instructions for the stuffing)
  • 6-12 apples such as Granny Smith, Golden Delicious and Red Delicious

    Pumpkin Spice Krispie Treats

    Prep Time 10 mins/ Total Time 10 mins

    INGREDIENTS

    • 4 cups mini marshmallows
    • 6 cups rice krispie cereal
    • 1/2 tsp . cinnamon
    • 1/2 tsp . pumpkin pie spice
    • 1/4 cup pumpkin puree
    • 3 Tbsp . butter

    INSTRUCTIONS

    1. ​Spread your 1/4 cup pumpkin puree on cheese cloth or between several paper towels and let it sit for 45 minutes, getting rid of the excess moisture in the pumpkin (alternatively, reduce pumpkin puree to 1/8 cup or omit entirely). *Removing as much moisture as possible is important, or your treats won’t turn out right!*

    Caramel Apples

    Serves 8 Caramel Apples

    • 8 Granny Smith apples (or any other variety)
    • 4 (4.51-oz.) bags soft caramels (See Kelly’s Note)
    • 3 Tablespoons heavy cream
    • Assorted toppings, such as chopped nuts, sprinkles or melted chocolate for drizzling

    EQUIPMENT:

    • 8 lollipop sticks or popsicle sticks

    1. Wash and thoroughly dry the apples then press a lollipop stick firmly into the top of each apple. Line a baking sheet with wax paper.

    Pumpkin Bars with Cream Cheese

    Vegetarian, Serves 24

    Pumpkin Bars:

    • 4 eggs
    • 1 2/3 cups sugar
    • 1 cup vegetable oil
    • 1 Âľ cups pumpkin puree
    • 1 teaspoon vanilla

    • ÂĽ teaspoon ground nutmeg
    • ÂĽ teaspoon ground ginger
    • 2 teaspoons baking powder

    • 16 oz. cream cheese-softened
    • 1 ½ Tablespoons corn starch
    • 1 /3 cup sugar
    • 1 teaspoon vanilla
    • 2 eggs- slightly beaten
