Simple Breakfast Idea: Sweet Potato Toasts Recipe

Aiming for a quick, healthy yet delicious and different from oat -, egg- and bread-based breakfast? How about sweet potato toasts? Yes, you’ve heard it right. And it’s not bread made from a sweet potato like e.g. banana bread, these are slices of the sweet potato made in a toaster with some toppings. So, here’s what you need to make them.

Ingredients:

  • 1 sweet potato
  • Salt

  • Pepper

  • Lemon juice

  • Olive oil to drizzle  

For toppings you might use:

  • 1 avocado
  • 400 ml can chickpeas

  • Basil leaves

  • 1 medium piece fresh (or jarred smoked) pepper

  • Peanut (cashew, almond) butter

  • Small handful baby watercress or sprouts

Instructions:

  1. Slice the sweet potato and put the slices into the toaster (set it to high). To toast the potato slices through, repeat a few rounds and check if they’re ready by piercing the potato flesh with a fork. Place the slices up on a plate.  
  2. For topping 1: take a bowl and combine the avocado, chickpeas, salt, lemon juice, pepper and smash all this with a fork. Taste and season if necessary. Put a mixture on potato slices and sprinkle with baby watercress or sprouts.   

  3. For topping 2: smear a good amount of butter (e.g. peanut, cashew, almond, depending on your taste) onto the slices, add the fresh or smoked pepper ribbons, a few basil leaves, black pepper and drizzle with a bit of olive oil. And voilà, your toasts are ready!
