Fall is finally here! And what better way to celebrate the new season than to make the best molasses cookies you’ve ever had? When I lived at home, my sisters and I would make these to eat during Halloween movie marathons. They’re soft, cinnamon-y, topped with a layer of melty frosting, and, most importantly, they’re easy to make!
Ingredients:
Cookies:
2 1/4 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 3/4 teaspoons cinnamon
1 teaspoon ground ginger
3/4 teaspoon cloves
1/4 teaspoon allspice
12 tablespoons softened butter
1/2 cup light brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla
1/3 cup molasses
Frosting
1 1/2 cups powdered sugar
2 1/2 tablespoons milk
Directions:
– preheat oven to 375
- whisk together flour, baking soda, salt, and spices
- In a separate bowl: cream butter, brown and granulated sugar
- Add egg, vanilla, and molasses
- Slowly add dry ingredients and beat until just mixed
- Put 1 tablespoon dough balls on a non-greased cookie sheet
- Bake 9 to 11 minutes (better to under-bake so they’re soft, shoot for closer to nine minutes)
- Make the glaze
- Cool cookies for 2-3 minutes before glazing
These cookies are best enjoyed warm with a glass of apple cider. Enjoy!
