Thanksgiving dessert is more than just the pies! Try out this simple, 7 ingredient recipe for some amazing pumpkin whoopie pies for everyone at your table that doesn’t like pie.
Ingredients For The Cookies:
- 1 Boxed Spice Cake Mix
- 1 Can of Pure Pumpkin
- 1.5 Teaspoons Vanilla Extract
- 1 Medium Egg
- ⅔ Cup Semi- Sweet Chocolate Chips
Instructions:
Preheat your oven to 350 degrees. Next, combine your choice of spice cake mix and a can of pumpkin in a large mixing bowl. Then add the vanilla and the egg. Mix well with a spoon and then fold in the chocolate chips, until the batter is fulling combined. Place dough evenly onto a greased baking in small one inch balls and bake for ten to fifteen minutes. While that is baking get started on the frosting.
Ingredients For The Frosting:
- ½ Cup of Butter
- 2 Cups of Marshmallow Fluff
- ¾ Teaspoon Vanilla
- 1 ⅓ Cup of Powdered Sugar
Instructions:
Soften the butter to room temperature and then use a stand mixer or a hand mixer to beat together the rest of the ingredients along with the butter. Beat at a medium speed for about 2-4 minutes or until the frosting is smooth. Once the cookies are cooled place frosting in between two to make them into whoopie pies.
