As the trees are changing and the air is starting to get more cool and crisp, you may be looking for recipes to bring in the Fall season. It’s bulking season folks! Here are a few delicious recipes to help bring some warmth to this chilly season!

1. No cold night is complete without a little bit of soup! So kick back, wear some fuzzy slippers, put on a scary movie, and enjoy this Chicken Pot Pie Soup!

Directions:

Preheat oven to 425℉ and line a large baking sheet with parchment paper. Roll out pie dough to a ⅛” thickness. Brush with egg wash and bake until golden, about 15 minutes. Let cool then then break into pieces.

In a large Dutch oven (or heavy bottomed pot) melt butter over medium heat. Add onion, carrots and celery and cook until the vegetables are tender, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Stir in flour, and cook until the flour is golden, about 30 seconds.

Add the water, broth, milk and potatoes. Bring to simmer, then reduce heat to simmer gently until the potatoes are tender, about 15-20 minutes. Season soup with salt, pepper and paprika. Stir in corn, green beans, peas and chicken. Cook until the peas and green beans are tender and the chicken is warmed through.

Garnish soup with parsley and serve with pie crust dippers.

2. Chicken is the most important food group for Fall. Almost every recipe has some form of chicken in it. Just because Fall is bulking season, doesn’t mean you can’t make something healthy! Try this Healthy Chicken Casserole!

Preheat oven to 350℉ and grease a 9×13 baking dish.

First, make chicken. Heat 1 tablespoon of olive oil in a large skillet. Season chicken all over with salt and pepper. Add chicken to skillet and cook for 6-8 minutes per side, or until cooked through. Let rest for 10 minutes, then cut each breast into bite sized pieces.

In a large high sided skillet over medium heat, heat oil. Add onion, sweet potato and brussels sprouts. Season with thyme, paprika, salt and pepper. Sauté until vegetables are slightly softened, about 5 minutes. Add chicken broth, bring to a simmer, and cover for an additional 5 minutes.

Mix in prepared rice, prepared chicken and cranberries. Transfer mixture to baking dish, top with sliced almonds, and bake 20 minutes.

Let cool 5 minutes and serve.

3. My personal favorite is Lemon Butter Garlic Shrimp. It’s a taste that makes you feel warm inside and take you to the beach instead of the cold weather.

In a large skillet over medium heat, melt 1 tablespoon butter and olive oil. Add shrimp, garlic, and crushed red pepper flakes and cook until shrimp is pink, 3 minutes.

Remove from heat and stir in remaining tablespoon butter, lemon juice, white wine, and parsley.

Serve.

4.  It’s the season of pumpkin spice. If you love pumpkin flavored anything and love cookie dough, you are going to LOVE this Edible Pumpkin Cookie Dough!

In a large bowl, combine butter and sugar. Using a hand mixer, cream together until smooth and fluffy. Add pumpkin and vanilla and mix again until smooth.

Add flour and pumpkin pie spice, and season with a pinch of kosher salt. Mix until smooth.

Fold in chocolate chips and place in a bowl for serving.

Preheat oven to 350°F and line an 8 inch by 8 inch pan with parchment paper.

Into a large bowl, combine pumpkin puree, cocoa powder, peanut butter, and sugar (if using). Using a hand mixer, mix all ingredients together until smooth and fully combined.

Transfer batter to prepared pan and bake until a toothpick inserted in the center comes out clean, about 35 minutes. If desired, frost.

Let cool, slice and serve.
