One day I ventured beyond my limits to a place far far away. North Dining Hall. When I arrived there, I discovered that they have kale! At the make your own salad bar, you have the option of fortifying your meal by adding kale to it (at lunch on most days). As a kale addict, this feature of North has me coming back on a biweekly schedule. I love kale not only for the taste but also the nutritious benefits. Here are a few reasons why you should implement it into your diet.Â

It has 659% of your daily value of vitamin A, 900% of vitamin K, fiber, antioxidants and even more. That’s crazy!
It helps with health conditions and diseases
Say goodbye to diabetes, heart disease, cancer, irritable bowel syndrome and osteosarcoma. Eating kale is a good way to handle and prevent all of these health problems.

The high fiber and water concentration can help get rid of stomach aches and make your digestive organs much happier.

Cheesecake Factory Kale Salad
I highly recommend this meal which can be purchased all across the nation at your local cheesecake factory. Eating a healthy meal always makes me feel better about the amount of cheesecake I devour when I go to this restaurant. This recipe can easily be repeated at home or the DH by getting kale and adding quinoa and a vinaigrette of your choice.
Kale smoothie
If you don’t like the taste of kale but still want to get in on the health benefits just put it in a smoothie and you will barely even taste it. Mixing your favorite berries, some yogurt and other fruits with a handful of kale is a great way to start off your morning and boost your immune system. In my smoothies I like to put yogurt, cashew milk, raspberries, blueberries, kale and spinach. It tastes like there are no vegetables are even in it.
Kale Chips
Kale chips are one of the easiest thing to cook. All you need to do is take kale add salt and oil and put it on a baking sheet. Wait 10 minutes and voila you have kale in a portable snack food. You can also add other seasonings to get all kinds of interesting flavours.

All of these things about kale are enough to make anyone go crazy with excitement but as Sam Smith sings “Too much of a good thing won’t be good for long.” Although kale is some peoples “life support” studies have shown that too much kale intake can cause for an overdose on vitamins and minerals which causes health problems. It may be hard to control yourself when you have access to kale but don’t get too Kale Crazy.
