Scrolling through Pinterest and pinning delicious looking food is one of my favorite things to do. But when I started to make the food I was pinning, I got nervous that it wouldn’t turn out right or taste good. I soon realized most things that look good on Pinterest taste even better and aren’t that hard to make as long as you pay attention to the directions.Â
I recently found a recipe for easy lo mein on Pinterest through “Damn Delicious” that made my mouth water. I was hesitant to make it because making Chinese food intimidates me and I can never get it to turn out good. But I decided to try it out anyway and it turned out absolutely delicious!

- 8 ounces lo mein egg noodles*Â
Â
- 1 tablespoon olive oilÂ
Â
- 2 cloves garlic, minced
- 2 cups cremini mushrooms, sliced
- 1 red bell pepper, julienned
- 1 carrot, julienned
- 1/2 cup snow peas
- 3 cups baby spinach
Ingredients for the sauce:
- 2 tablespoons reduced sodium soy sauce, or more, to taste
- 2 teaspoons sugar
- 1 teaspoon sesame oil**
- 1/2 teaspoon ground ginger
- 1/2 teaspoon Sriracha, or more, to taste
* You can find lo mein egg noodles in the international food isle at Walmart. If you absolutely can’t find any you can use linguini or spaghetti pasta
**You can substitute sesame oil for olive oil, but it tastes much much better when made with the sesame oil (definitely worth the investment)Â

Directions:
In a small bowl you will mix together all the ingredients for the sauce and set asideÂ

Cook the lo mein noodles according to their package and let drain well. I put my noodles on to cook before I did anything and let them sit in the strainer the rest of the time that I cooked.

Heat olive oil in a skillet (or even better in a cast iron pan). When the oil is heated (about 2-3 minutes max) add garlic, mushrooms, bell peppers and carrott. Cook the vegetables until they are tender, stirring frequently (3-4 mins). Once those are tender add the snow peas and spinach and cook until the spinach has wilted into what looks like mushy green blobs (2-3 mins). Once all of those are cooked, add the lo mein noodles and sauce into the skillet. Toss the mixture to combine and enjoy!Â

This turned out great for me and everyone who ate it loved it! It makes 4 large servings. The first time I made the recipe I used olive oil (instead of sesame oil) and a nonstick skillet. The second time I made it I used sesame oil and a cast iron skillet and it turned out so much better! I would definitely reommend sesame oil and cast iron for the recipe!Â
