The Student Oven: White Chocolate, Cranberry & Pistachio Biscuits

These delicious biscuits blend fruit, nuts and chocolate to provide real indulgence. The winning flavour combination of cranberry, pistachio and white chocolate creates a tasty balance between sugar, salt and richness. This recipe is fairly simple and quick to make – look no further if you need to take the edge off an essay crisis.  

Ingredients

·      100g butter

·      60g caster sugar

·      50g demerara sugar

·      1 large egg

·      125g plain flour

·      1/2 tsp bicarbonate of soda

·      50g pistachio nuts, chopped

·      50g white chocolate chips/buttons chopped to a ¼

·      50g dried cranberries, chopped

 

Method

1.     Preheat the oven to 180 C/350 F/Gas Mark 4.

2.     Grease your baking tray (or two if they are quite small).

3.     Cream the butter until it is smooth and creamy and then add both types of sugar. Again, cream until the mixture is light in colour, soft and creamy.

4.     Crack the egg into the bowl, and then beat it into the mixture until it is totally combined.

5.     Add the flour and bicarbonate of soda to the mixture and carefully fold in until the mixture is smooth and fairly wet.

6.     Ensuring that the pistachio nuts are shelled and chopped, and the dried cranberries and the chocolate are chopped fairly finely, carefully mix them into the biscuit mixture until thoroughly combined. The nuts, chocolate and cranberries should be evenly distributed through the mix.

7.     Drop the mix in tablespoon-sized scoops onto the baking trays. Leave plenty of room between scoops as the biscuits will spread out during the baking process.

8.     Bake the biscuits in the middle of the oven until they are golden brown – this should be between 10 and 12 minutes, depending on the size of your biscuits. Keep a close eye on them –  any bits of cranberry showing can catch easily!

9.     Remove from the oven when ready and leave them to cool on the tray for about 10 minutes. Then, carefully lift them from the tray using a palette knife or a turner and place on a cooling tray.
