I don’t know about you guys, but my favorite kind of food is anything involving breakfast foods. But I’m usually rushing out every morning to catch the bus, so I get stuck eating a quick bowl of cereal — if I’m lucky. Once the weekend rolls around, though, I love sleeping in and waking up to make some late-breakfast pancakes! Pancakes are so easy to make because they’re quick and very easy to customize. Here’s a quick, basic way to make enough delicious chocolate chip pancakes for you and your roommate — maybe even some leftovers for the next day!
Here’s what you’ll need:
- 1 cup of flour
- 2 tablespoons of baking powder
- 2 tablespoons of vegetable oil
- ½ teaspoon of salt
- 3 tablespoons of sugar
- 2 eggs (or 1 large egg)
- 1 teaspoon of vanilla extract
- 1 cup of milk (soy or almond milk works, too)
- ½ cup of chocolate chips
Optional: bananas, peanut butter, etc.
Here’s how you make them:
- Mix the flour, baking powder, sugar, and salt in one bowl. In another bowl, mix the eggs, milk, vegetable oil, and vanilla extract, and beat until smooth.
- Add the ingredients from both bowls together, and make sure to mix thoroughly, adding the chocolate chips at this time (add as many as you want!).
- If you have any other ingredients you’d like to use, such as bananas, now would be a good time to add them in, or you can wait until the end to add them on top of the pancakes.
- Pour some of the mixture into a skillet (make sure to use cooking spray first) with the heat set on medium, making sure to get a circular shape. I like to do this using a half-cup measuring spoon.
- Let the mixture sit on the skillet until bubbles start to form, then flip it over, and wait until the pancake is golden brown. Repeat until you’re out of pancake mix!
That’s all there is to making a delicious breakfast! Make sure to customize yours by adding something extra, if you haven’t already. If not, they also taste great alone. Enjoy!
