For a Dorm with a Kitchen:
Turkey Sausage, Apple, and Cranberry Stuffing
Serves 6
Ingredients:
- 3/4 cup and 2 tablespoons and 1 teaspoon cubed whole wheat bread
- 1/4 cups cubed white bread
- 10 ounces ground turkey sausage
- 1/2 cup and 1 tablespoon and 2 teaspoons chopped onion
- 1/3 cup and 2 tablespoons chopped celery
- 1-1/2 teaspoons dried sage
- 1 teaspoon dried rosemary
- 1/4 teaspoon dried thyme
- 5/8 Golden Delicious apple, cored and chopped
- 1/3 cup and 2 tablespoons dried cranberries
- 3 tablespoons and 1/2 teaspoon minced fresh parsley
- 1/3 cup and 2 tablespoons turkey stock
- 2 tablespoons and 1-1/4 teaspoons unsalted butter, melted
Directions:
- Preheat oven to 350 degree F (175 degree C). Spread the white and whole wheat bread cubes in a single layer on a large baking sheet.
- Bake for 5 to 7 minutes in the preheated oven, or until evenly toasted. Transfer toasted bread cubes to a large bowl.
- In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to blend flavors.
- Pour sausage mixture over bread in bowl. Mix in chopped apples, dried cranberries, parsley, and liver.
- Drizzle with turkey stock and melted butter, and mix lightly
For a Dorm with a Kitchenette:
Butternut Squash Soup
Serves 4
Ingredients:
- 1-1/4 pounds butternut squash, cubed
- 1-1/4 onions, chopped
- 2 teaspoons butter
- 2-2/3 cups vegetable broth
- 1/3 cup heavy cream
- salt and pepper to taste
- 5/8 dash ground nutmeg
- 5/8 dash ground cloves
- 5/8 dash ground cinnamon
Directions:
- In a large microwave safe dish combine squash, onions and butter.
- Cover and microwave on high for 4 minutes.
- Peel squash.
- Stir in broth and cook on high for another 20 to 25 minutes, or until squash is tender.
- Puree squash, onions and broth in a food processor or blender.
- Add cream, salt and pepper, and microwave on high for another 3 to 4 minutes, or until heated through.
- Flavor with nutmeg, cloves and cinnamon to taste
For a Standard Dorm Room:
Baked Apples:
Ingredients:
- 2 apples
- 2 tablespoons brown sugar
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 2 teaspoons butter
Directions:
- Core the apples, leaving the bottom intact.
- In a bowl, mix the brown sugar, cinnamon and nutmeg.
- Spoon the sugar mixture into the apples and set a teaspoon (or more to your taste) of butter on top of each apple.
- Place the apples in a deep casserole dish and cover.
- Microwave for 3 1/2 to 4 minutes or until tender. Let the apples sit for a couple minutes before serving
