This week’s recipe is an adaptation of many people’s favorite desert item: lemon bars. Most lemon bar recipes create gooey, sticky lemon filling with a crust on the bottom and a lemon glaze on top. I am a huge fan of my mother’s homemade lemon bars, which are always so gooey and tangy and practically melt in your mouth.
However, this adaptation of lemon bars turns out more like a cake instead of a gooey bar but still tastes refreshingly lemony. If you are a fan of anything lemon I recommend trying these bars even though they are not normal lemon bars. I was pleasantly surprised with how well this recipe turned out because at first I was wary of only using two ingredients: lemon pie filling and angel cake mix.
This recipe is great for spring and summer because of the light lemon flavor, which can be enhanced by pouring a simple lemon glaze on the top. I found this recipe on the ever addicting Pinterest with the original recipe coming from a food blog called Practically Living (www.livingpractically.blogspot.com). I was intrigued by her recipe because it called for only two ingredients, which is perfect for dorm kitchen cooking.
All you need is:
1 box of angel food cake mix
1 can of lemon pie filling
1. Mix cake mix and lemon pie filling in a bowl. Hand mixing or whisking works best for this. Mix until the mixture starts to puff up a little.
2. Pour into an ungreased 9×13 baking dish and bake for around 20 minutes at 350. Sprinkle powdered sugar on top if you have it or frost with a lemon glaze on top.
