Serves 1-2, depending how hungry you are.

The Ingredients

Day-old yeast bread (go for something slender with a sturdy crust, like baguette or ciabatta — you’ll understand why later)
Enough almond milk to fill a small plate
½ tsp cinnamon
1 tsp vanilla extract
2 tbsp melted coconut oil

The Recipe

  1. Purchase your yeasty bread from the store and don’t touch it for one full day. Go for a narrow, chewy loaf with a thick crust (like baguette or ciabatta) so that your toast maintains its structure once you’ve dipped it.
  2. Place a non-stick pan on the stove and set the burner to medium. Let it warm up while you follow steps 3 and 4.
  3. Slice your bread into pieces that are one inch thick — go for around 10-15.
  4. Pour your almond milk onto a small plate. Stir in half of the cinnamon and half of the vanilla. Then, add half of the melted coconut oil.
  5. One by one, dip half of your pieces of bread in the almond milk mixture and place them in the pan. Let ‘em sizzle for 2-3 minutes, then flip. Cook until golden.
  6. Repeat steps 5-7 with the remaining ingredients. Add more almond milk if necessary.
  7. Decorate your toast with the toppings of your choice. Or, experiment with the flavour combos below!
