Eggs Every Day: 7 Days of Yummy Breakfast

Let’s be honest: eggs are simply the best breakfast option out there. No matter how you prepare them, they’re protein-packed, easy to cook, and above all absolutely scrumptious. Here are seven tasty recipes so that every day of the week you can savor a different, delicious egg-centered morning meal. Life is short; enjoy your eggs.

1) Spinach, Feta, & Sundried Tomato Omelette

  • 2 eggs
  • salt & black pepper
  • 1/2 tablespoon unsalted butter
  • 1/2 cup chopped spinach
  • 2 tablespoons of chopped sun-dried tomatoes
  • 2 tablespoons of crumbled feta

 

2) Avocado Omelette

  • 2 eggs
  • 1/4 cup Dairy Whip Whipped Cream
  • 3/4 tablespoon butter
  • 1/2 sliced avocado
  • 1 small diced tomato
  • 6-7 diced black olives
  • fresh, finely chopped coriander
  • 1/4 cup grated cheddar (optional)

 

 

3) Kale & Mozarella Scrambled Eggs

  • 1 Tbsp olive oil
  • 1/4 cup of chopped onion
  • Pinch of red pepper flakes
  • 4 eggs
  • 1/2 cup of grated mozzarella cheese
  • 1 ounce fresh kale, destemmed and thinly sliced (about a cup)
  • 1/2 teaspoon Italian seasoning (dried rosemary, oregano, thyme, basil)
  • Salt and black pepper to taste

 

 

4) Tuscan Scrambled Eggs

  • 3 Tbsp extra virgin olive oil
  • 1 large yellow onion, peeled and chopped
  • 14 oz can of diced tomatoes
  • 6 eggs
  • Salt and black pepper to taste

 

5) English Muffin Egg Pizza

  • Olive oil
  • 8 tomato slices
  • 4 hard-cooked, sliced eggs
  • Grated mozzarella
  • Oregano and salt to taste
  • English muffins

 

6)  Mexican Eggs

  • 4 slices bacon, chopped
  • 1 can (16 oz.) refried beans
  • 2 tablespoons canned chopped green chiles
  • 4 eggs
  • 1/2 cup shredded jack cheese
  • 1/4 cup chopped green onions
  • 1 chopped tomato
  • 1/4 cup chopped cilantro
  • 1 chopped avocado
  • warm corn tortillas

 

7) Yummy Eggs & Ham Wrap

  • 1-1/2 teaspoons butter
  • 1 egg, lightly beaten
  • 2 ounces thinly sliced deli ham, chopped
  • 1 tablespoon chopped yellow & green pepper
  • 1 tablespoon chopped onion
  • 1 tablespoon salsa & sour cream
  • 1 warmed flour tortilla
