Ingredients (makes about 10 cookies)Â
125g unsalted butterÂ
220g plain flourÂ
1 tsp baking powderÂ
150g brown sugarÂ
50g caster sugarÂ
1 tsp saltÂ
1 tsp vanilla pasteÂ
1 large eggÂ
105g milk chocolate chunksÂ
35g white chocolate chunksÂ
35g dark chocolate chunkÂ
MethodÂ
1. Place the butter in a medium saucepan over a high heat. Once melted, stir constantly until the butter foams and turns a nutty brown colour. Remove from the heat. Â
2. Mix the flour, baking powder, sugars and a pinch of salt together in a large mixing bowl. Add the butter, vanilla and egg and combine. Fold in the chocolate chunks. Â
3. Roll the mixture into 100g balls, transfer to a lined baking tray and place in the fridge for at least half an hour. Â
4. Preheat the oven to 175°C.Â
5. Transfer the tray to the oven and bake for 11 minutes.Â
6. Remove from the oven, place on a wire.Â
