Microwave Mug Blondie Â
Over the next few weeks when deadlines are getting heavy and we need a little pick me up, this recipe is quick and AMAZING to satisfy a sweet tooth. Most ingredients can be picked up fairly cheap, or if you’re a baker (like myself) they are already in your cupboard! Even better, it literally only takes five minutes to make!

Ingredients
- 2tbsp of melted butter
- 2tbsp brown sugar (light brown sugar also works)
- 3tbsp milk
- ½ tsp vanilla essence
- 6tbsp self-rising flour
- Pinch of salt
- Pinch of baking powder (optional)
- White chocolate chips (as many as you like but I mean c’mon, throw them all in)
- Soft toffee (you can pick up a bag of Thornton’s toffee or Werthers Originals toffees for £1 a bag in Morrison’s and will last you a good few mug blondies)
- Ice-cream or toffee sauce to top off (optional)

Method:
- Grab your cutest mug and melt the butter inside it, it usually only takes 20 seconds
- Mix in the brown sugar, milk and vanilla – stir until smooth
- Add flour, salt and optional baking powder until mixed
- Throw in some chocolate chips and toffees to the batter and mix it all up
- Microwave for 1 minute 20 seconds (800W microwave) if it still looks a little uncooked then pop it back in for another 20 seconds
- Top off how you would like and enjoy warm

The best thing about this recipe is that you can make it all up and store it in the fridge (uncooked) for up to 2 days then you can simply take it out when you fancy it and pop it in the microwave.
