Since it is practically winter in Boone, warm drinks are a necessity for any App State collegiette.  The classic hot chocolate standby is good on a cold day, but I recommend mixing up your warm beverage routine with these 3 delicious recipes:

Pumpkin Spice Hot Chocolate

Ingredients

2 tbsp. unsweetened cocoa powder

1/2 tsp. cornstarch

1/2 tsp. stevia or 2 tbsp. sugar

1/4 tsp. vanilla extract

1 cup coconut milk, unsweetened from carton or whole milk

2 tbsp. pumpkin from can (not pie filling)

1/4 tsp. pumpkin spice

 

Instructions

  1. In a medium sauce pan; add all your ingredients and set over low heat. Whisk until thick and bubbly. Pour into a mug and serve with whip cream and or marshmallows.

 

 

Cookies and Cream Hot Chocolate

Ingredients

3 cups cookies and cream ice cream

3 TBSP unsalted butter

ÂĽ cup mini chocolate chips

1 cup water

Oreo Frozen Whipped Cream Circles (see here)

 

Instructions

1.In a large saucepan, melt together the chocolate chips and butter. Then add the ice cream (yes, I know but go with it).

2. Once ice cream has melted add the water to thin it out and let it be heated through.

3. Serve warm and add Oreo Frozen Whipped Cream Circles.

4. Cookies and Cream Ice Cream:
3 cups heavy whipping cream
½ cup powdered sugar
1 cup Oreo cookies
1 tsp. vanilla bean paste

5. In a bowl combine the heavy cream, sugar, and vanilla paste. Place in fridge overnight.

6. Place in your ice cream machine and freeze to the manufactures instructions. Remove from bowl and fold into Oreo cookie pieces.

 

Almond Joy Hot Chocolate

Ingredients

2 c. almond milk

2 c. coconut milk

1/3 + semi-sweet chocolate chips {I like to add a little more in there -yum}

1/4 c. sugar

 

Instructions

1. Combine 1/2 c. of milk, sugar, and chocolate chips in medium sized pan on medium heat, until melted. Stirring occasionally with wooden spoon

2. Add the remainder of the milk and heat to desired temperature. 

3. Blend with electric beaters and you’re done!

 

You can only drink so much tea, coffee, and hot chocolate before getting bored so these recipes are a great way to mix up your beverage routine!
