Impress Your Friends With These Fabulous Desserts

This week I decided it might be fun to switch things up a little and bake. Which is big for me, because although I absolutely love trying new foods, and other peoples cooking, my experience in the kitchen is pretty limited. I have a hard time cooking when I don’t have anyone else to do it for. But I have to say that every time I do, I never regret it. So this week I am giving you a few Pinterest recipes that I highly suggest you try.

 

Slutty Brownies (made easy)

1 box chocolate chip cookie mix (or even a package of refrigerated dough)

1 box brownie mix (and ingredients for brownies)

16 Oreo cookies or Reeces Cups

Just line a 9×9 pan with parchment paper, put the cookie dough on the bottom, place Oreos evenly across, and then poor the brownie batter! Bake at 350, or until done, and serve with some ice cream. When I made mine they weren’t quite done, so that was a fail. Make sure you continuously check batter with a toothpick! And I would also suggest maybe adding a little more cookie dough.

 

Inception Cookies (chocolate chip cookies with an Oreo in the middle)

Here is a recipe I found, but you can really just use your favorite chocolate chip cookie recipe. Just use a small cookie dough scooper and scoop out a ball, put a double stuffed Oreo on top, then add another scoop and press the edges together. These are always a big hit!

  •  2 sticks softened unsalted butter
  •  3/4 cup packed brown sugar (I usually use “golden” but ran out and ended using half dark)
  •  1 cup granulated sugar
  •  2 large eggs
  •  1 Tablespoon pure vanilla
  •  3 1/2 cups all purpose flour
  •  1 teaspoon salt
  •  1 teaspoon baking soda
  •  5 oz (half bag) mini chocolate chips
  •  1 bag Oreo Cookies (or Tagalongs, or Samoas, or whatever you want. Go crazy)

Preheat oven to 350 degrees F.

  1. Cream butter and sugars in an electric mixer until well combined.  Add in eggs and vanilla and beat until well combined.
  2. In a separate bowl mix the flour, salt and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined.
  3. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie, smoosh down, pressing toward the edges.  Take another scoop of dough and place on bottom of Oreo Cookie.  I sealed mine by pressing the dough to the edges, then rolling the cookie between my hands until it was completely smoothly covered.
  4. Chill in refrigerator at least 15 minutes before baking.
  5. Place onto a parchment-lined baking sheet and bake cookies 10-20 minutes, depending on the size of cookie scoop you use. They should be just golden and the bottoms lightly browned.
  6. Using a large scoop will give you GIANT cookies (see Oreo cookie) that take almost 20 minutes to bake completely

Using a smaller scoop gave me the ratio I preferred (see Tagalong cookie), and they baked faster as an added bonus

Let cool for 5 minutes on a baking sheet before transferring to cooling rack.

Banana Ice Cream (healthier option)

Just chop up some bananas freeze them, and then use a magic bullet, a blender, or whatever mixer you have to mix them up when you are craving a treat. This is so much better than it sounds! It is also really great with peanut butter, a little chocolate, or nuts. I would highly suggest this, even if you aren’t eating healthy.
