Ingredients:

2 chicken breasts

2 cups shredded cheese

2 onions

4 tortillas

Lettuce

½ tsp crushed red pepper

½ tsp dried thyme

½ tsp ground black pepper

Vegetable Oil

 

Directions

1. Chop the chicken into bite sized pieces. Cook the chicken until fully cooked through.

 

2. While the chicken is cooking, preheat the oven to 350 degrees and chop the onions

 

3. Line a baking sheet with aluminum foil and put 2 tortillas on the sheet

 

4. If you want your quesadilla to be very cheesy, line the tortillas with a base of cheese

 

5. Once the chicken is cooked, pour it into a bowl

 

6. In the same pan the chicken was cooking in, add the onions to the pan and cook them medium heat until they become slightly transparent

 

7. Add the cheese and onions in the bowl. We chose a 3 cheese blend and monterey jack for the cheeses

 

8. Once the onions are done cooking stir it in with the chicken and cheese

 

 

9. Add ½ teaspoon of thyme and ½ teaspoon of crushed red pepper, stir

 

10. Once everything is stirred in, pour the mix onto the two tortillas

 

11. Place a tortilla on top of the ingredients and lightly brush the tortilla with vegetable oil

 

12. Place in the oven for ten minutes. Once the timer goes off, cut into pieces and enjoy :)

 

 

 

To prevent warm lettuce, you can chop lettuce and add it to your quesadilla once it has been in the oven!
