Makes four individual crumbles
Take a well-earned break from revision and indulge in these delicious apple and berry crumbles. They are really simple and quick to make and bake, so there’s no excuse not to give yourself a sweet treat to reward yourself through the exam period!
Ingredients:
· 2 large cooking apples e.g. bramley
· 50g caster sugar
· Two handfuls of berries (e.g. strawberries/blackberries/blueberries)
· 150g plain flour
· 150g unsalted butter, cooled and cubed
· 30g Demerara sugar
· Berries for decoration
Method
1. Preheat the oven to gas mark 6/200 C/400 F.
2. Peel and chop the cooking apples into approximately 3cm2 pieces and put in a pan with a few tablespoons of boiling water and the caster sugar. Simmer gently until the apple has softened, but before it turns too mushy.
3. Take off the heat and leave to cool gently, before carefully mixing in the berries.
4. Next, make the crumble topping by adding the flour and cubed butter to a bowl, and breaking up with your hands to form a breadcrumb-like mixture using your fingertips. Stir in the Demerara sugar.
5. For the assembly of the crumbles, put a couple of tablespoons of the fruit mixture into the base of each ramekin, or until it comes about halfway up. Ensure you add enough liquid from the stewed apples.
6. Then, add the crumble topping but gently sprinkling it over the top to make sure no fruit is showing.
7. Repeat this process with the other three ramekins.
8. Place the ramekins onto a baking tray and place them in the centre of the preheated oven.
9. Bake for around 25 minutes, until the top of the crumble is a golden brown. Be careful not to burn it.
10. Take out of the oven and leave to cool for 5 minutes.
11. In the meantime, fan some strawberries, by following this simple video and place one on top of each individual crumble. Alternatively, scatter a couple of berries of your choice over each crumble.
12. Serve with custard, cream or ice-cream, and enjoy!
TIP: add 30ml of orange juice to the stewed apples to add a citrus flavour to the crumbles.
