Preparing Thanksgiving dinner is an enormous job, so why not help mother out by preparing some of the simpler dishes yourself? Here are some nice go-alongs for a turkey dinner that are quick and easy to make.
Â
Perky Turkey Stuffing
Add 1/2 cup chopped Spanish peanuts to a package of prepared dry stuffing mix and use according to directions.
Parsley Rolls
Combine 1 tablespoon melted butter or margarine with 2 tablespoons chopped parsley. Make a shallow cut across the top of each roll in a package of refrigerated brown-and-serve rolls. Spread 3/4 teaspoon parsley mixture into each cut. Bake according to directions.
Cranberry-Orange Relish
Wash 1 pound (4 cups) fresh cranberries and 1 seedless unpealed orange. Cut orange into quarters. Have mother put the fruit through a food chopper for you. Add 2 cups sugar and, if you wish, 1/2 cup toasted slivered blanched almonds. Mix well and chill 2 or 3 hours before serving.
Down East Pumpkin Pie
Mix together 2 cups canned pumpkin, 1/2 cup maple syrup, 2 slightly beaten eggs, and 1/2 cup of evaporated milk. Heat another 1/2 cup evaporated milk and stir in 2 tablespoons butter or margarine. Add this to pumpkin mixture along with 1/2 cup dark brown sugar, 1/4 teaspoon salt, 1 1/2 teaspoons cinnamon, 1.4 teaspoon nutmeg, 1/4 teaspoon ginger, and 1/2 teaspoon ground cloves. Mix well. Pour into prepared graham-cracker piecrust. Bake at 425 degrees for 15 minutes. Turn heat down to 350 degrees and bake another 50 minutes. Serve cold topped with fluffs of whipped cream.
