I cannot claim to be any sort of chef. In fact, I just cooked raw chicken for the first time in my life this year. But, as I get older, I realize there is some value in being able to prepare a couple of basic dishes. I’ve recently experimented with various baked chicken recipes and finally perfected one. Here’s my recipe for an easy (yet delicious) baked pesto chicken dish. Enjoy!

Ingredients: 

  • 4 thin chicken breasts 
  • 2 tbsp of olive oil 
  • Salt 
  • Black pepper 
  • Paprika 
  • Oregano 
  • Prepared pesto 
  • 1 large tomato
  • Shredded mozzarella 
  • Freshly sliced mozzarella  

Cooking Instructions:

  • Preheat the oven to 375 degrees F
  • Season both sides of the four chicken breasts with the salt, black pepper, paprika, and oregano
  • Put seasoned chicken breeats in a large ceramic dish 
  • Evenly spread a spoonful of the pesto on each chicken breast 
  • Drizzle your chicken breasts lightly with olive oil
  • Slice your tomato and place a slice on each chicken breast 
  • Place a slice of the fresh mozzarella on each chicken breast 
  • Sprinkle shredded mozzella over the entire dish 
  • Cook for 35 minutes
