My Favorite Recipes for Off-Campus Cooking

Since I started living off-campus this fall, I have started to cook for myself almost daily. While I enjoy cooking, there is an added challenge to making your own meals as a full-time college student also working part-time, and in a cramped kitchen to top it off. What really makes the time-consuming effort worth it is the bliss of a wonderful meal dancing on your taste buds. Here are my favorite recipes I’ve managed to cook out of my tiny apartment!

 

Garlicky Greek Chicken

This chicken thigh recipe is to die for, pulling plenty of spices and flavorings (such as lemon, oregano, and garlic) you’re likely to already have in your kitchen. This recipe requires some extra effort since you must both pan-sear the chicken and bake it shortly after, but it’s definitely worth it.  

Creamy Tuscan Chicken

If you’re looking for a fall recipe, this Creamy Tuscan Chicken is perfect for you. With a creamy sauce and lots of veggies, it is very filling while remaining nutritious. Best of all, it’s fairly easy to make, and only uses one pan!

Cacio e Pepe

Yes, Cacio e Pepe is basic. But it’s also incredibly delicious and easy to make while on a time crunch. Look at it this way, Cacio e Pepe is basic for a reason; it’s delicious!

Garlic Rosemary Pork Chops

I love this recipe. It’s simple and easy to make, plus pork is very inexpensive right now! Just last week, I purchased two boneless pork chops for just $4.00. I’m also a sucker for rosemary, so the fact that the recipe calls for using it is only icing on the cake. 

 

Garden Chicken Pesto Sandwich

Finally, I did not discover the Garden Chicken Pesto sandwich online, but rather recreated it based on Bay State Underground’s version! First, I pan sear some thinly-sliced chicken breasts in a skillet, cooking them through. Then, I grab some slices of white bread (or a potato bun works too!) and add mozzarella cheese, pesto, the chicken, plus balsamic vinegar inside. I put the sandwich back on the skillet with some butter, cooking it on both sides until the mozzarella melts. With that, you have your own Garden Chicken Pesto sandwich!

I’ve enjoyed these recipes throughout the semester, and found them easy to cook even in my cramped kitchen! I hope you enjoy, bon appétit :-)
