It’s Monday Meals with Monica! Salad doesn’t need to include greens. This one can be from some canned goods you have in your pantry plus a few fresh ingredients.
Ingredients:
- 1 can corn (not creamed)
- 1 can black beans
- ½ onion, diced
- 1 handful of cilantro, torn
- 2 plum tomatoes diced
- Optional: ½ c feta cheese
Simply mix all of the ingredients together!
