Top Three Mug Cakes To Make In Your Dorm Room

One of the things I miss most when I am at college is not being able to bake. However, I recently made my first mug cake, and let me tell you: if you have access to a microwave, these mini microwave cakes are your answer to satisfying that baking urge.

Vegan Walnut Banana Bread by Jessica in the Kitchen

This recipe is actually the FIRST EVER mug cake I made, and I have to say that it hit the spot on my banana bread craving. My favorite aspect of all of Jessica Hylton Leckie’s recipes is that the list of ingredients is not obscure. You will need to purchase a small package of flour and baking powder to make this mug cake, but the rest of the items you can easily find in the dining hall if you do not already have them on hand. Vegan Chocolate Mug Cake by Jessica in the Kitchen

If you can’t already tell, I am a fangirl of Jessica in the Kitchen @jessicainthekitchen. She has several mug cake recipes, but her Vegan Chocolate one is a must. If you already have the flour and baking powder from the above recipe, you will just need some cocoa powder and you are good to go. With a tablespoon of chocolate chips, this mug cake is perfect for all chocolate lovers who need a study break!

Gluten-free & Vegan Pumpkin Spice Mug Cake by Rachel Mansfield

I am also a big fan of Rachel Mansfield whose basic recipes are easy to follow and often gluten and dairy-free. She recently posted a video on her Instagram @rachlmansfield showing her followers how to make a simple pumpkin spice mug cake. Granted, you will need to splurge on a can of pumpkin purée and pumpkin pie spice, but you could ~bake a bunch of these mug cakes for your floormates to use up the ingredients. This recipe is the perfect way to manifest those Fall vibes.
