Easy recipes to use in your crock pot:

Apartment life is amazing. I love the freedom of having my own space, my own schedule, a living room, and best of all having my own food. Being a picky eater I love being able to cook for myself and having total control over what I eat. I love being able to know exactly what I’m eating and getting to experiment with recipes

But life as a student can be chaotic and most nights I don’t feel like coming home and having to cook. Being the picky eater I am I wasn’t happy resorting to microwaveable food and I needed a solution, which is when my mom suggested a crock pot.

After experimenting with my meals and finding what worked best and what didn’t work so well I decided to compile a list of five easy to follow crock pot recipes for chicken for you all to try out!

My absolute favorite and main go to is a recipe from my mom that I hope you all will love as much as I do. I usually pair all of these recipes with rice, and if I have time the night of I like to saute vegetables to throw in too.

Mommy’s Crock Pot Chicken Recipe

Cook on LOW for 6 hours, or HIGH for 4 hours

2 chicken breasts (ideally thawed, but the greatness of crockpots is they don’t have to be!)

One packet of powdered ranch

One can cream of chicken soup

Mix the powdered ranch and soup together, smother the chicken breasts, let cook for (at least the above time) until you come home

Teriyaki Chicken Recipe

Cook on LOW for 8 hours, or HIGH for 5 hours

2 chicken breasts

2 tsp. minced garlic

2 tsp. minced ginger

¼ cup honey

3 tbsp. brown sugar

½ cup low sodium soy sauce

2 tsp. toasted sesame oil

2 tbsp. rice vinegar

¼ cup cold water

1 tbsp. sesame seeds

2 tbsp. sliced green onion

Mix the teriyaki sauce and pour over the chicken, leave to cook!

Cream Cheese Chicken Chili

Cook on LOW for 8 hours

1 15-oz. can black beans

1 15.25-oz. can corn, undrained

1 10-oz. can Rotel tomatoes, undrained

1 package ranch dressing mix

1 tsp. cumin

1 Tbsp. chili powder

1 tsp. onion powder

1 8-oz package light cream cheese

2 chicken breasts

BBQ Pulled Chicken

Cook on LOW 7 hours, or on HIGH for 4 hours

1 ½ lbs chicken breast

½ medium onion, chopped

2 garlic cloves, chopped

1 tsp ground paprika

1 tsp salt

1 tsp brown sugar

½ tsp chili powder

½ tsp hot sauce

1 ½ cup Sweet Baby Ray’s original barbecue sauce

Chicken Tortilla Soup

Cook on LOW for 6-8 hours

2 boneless chicken breasts (can be frozen)

1 can of black beans

1 can of diced tomatoes with green chilies (roasted tomatoes are also good)

½ onion chopped

1 cup of corn

2 cups of water

1 Tsp Chili powder

1 Tsp of Cumin

½ Tsp of Garlic Salt

Tortilla chips

Shredded cheese

Fresh cilantro
