A guide to eating on Pearl St Mall as a vegetarian
Eating out while being vegetarian definitely has its challenges. I used to always stick to Italian food because I knew there would be pasta. However, after years of living in Boulder, I have picked out my absolute favorite vegetarian meals across Pearl St Mall! These dishes are absolutely delicious and have made eating out more than just getting pasta.
- Rosetta Hall’s Broccoli Parmesan Soup – Typically, I am not a huge soup person, but this specific soup creates a melody in my mouth. It’s a creamy broccoli soup with lemon pesto, tomato croutons, and a heap of parmesan cheese.
- Hapa Suhi’s Udon Noodle Bowl with Tofu – The base of this dish is simple: udon noodles in a dashi broth with tempura bits, bok choy, and wakame. It is well seasoned and absolutely delicious. The star of this dish, in my opinion, is the tofu. It comes in huge tempura fried cubes right in the soup, and it always comes perfectly cooked and crispy. On the side, I highly recommend their Ume Shisho Maki sushi roll, which includes plum, cucumber, and shiso leaf. It tastes like nothing else I have ever had and is an excellent compliment to the udon.
- SALT’s Quinoa Chickpea Burger – This is my absolute favorite vegetarian burger that I have ever had. It includes quinoa and chickpeas, of course, along with beets, cilantro, cheddar, avocado, and lime cream on a toasted brioche bun. It also comes with fries or salad (I definitely recommend their fries). In my book, this burger outdoes both impossible and beyond meat. It’s crispy and crunchy and filled with flavor that makes me feel like I’m tasting a real burger.Â
- Bartaco’s Falafel Tacos – If you like street tacos, this is the place for you. Each taco includes two falafels in a tzatziki sauce. The falafels are always crispy, crunchy, and well seasoned. Bartaco also has fabulous mushroom and cauliflower tacos that are 100 percent worth a try.
- Pizza Colore – For the pickier eaters and those looking for a chapter bite to eat, I absolutely love Pizza Calore. They have a multitude of flavorings, but my favorite will forever be red sauce cheese pizza. I used to eat here at every single lunch break when I worked on Pearl St.
Overall, there are many vegetarian options on Pearl St. Mall. You just have to know where to look.
