As we all know, cooking when you’re in college can sometimes be a challenge and so can the cost that comes with it. When you have a significant other a lot of the time you end up spending most of your time together at dinner or at night and during that time you don’t normally want to spend that in the kitchen for hours. So I am going to recommend the best quick and easy dinners that I’ve found work the best and will leave you with leftovers.
- My all time favorite has been the Easiest Lasagna Ever
I had leftovers for days and it was super easy to make. In total I would say it took me about an hour which is what the recipe also says it should take about that long.
- Next up is Lemon Garlic Chicken Pasta
This is so filling and flavorful you’ll want to just keep eating more. This recipe took me a little bit longer mainly because I was making sure I was getting all the current measurements and wasn’t going to heavy. The recipes says it takes about 30 minutes and I would say it took me about an hour including the prep work but again I was being very careful with the ingredients.
- Now we have a delicious Salmon with a Brown Sugar Glaze
This one is pretty simple with only 4 ingredients and is amazing!! This one only took me 20 minutes to cook and while I cooked it I also made mashed potatoes and a salad.

Yes I know breakfast sandwiches are not hard, but I will say when using an English muffin over sliced bread you’re already ahead, and then adding your favorite hot sauce (I prefer Sriracha on my breakfast foods) you will be in heaven! Super quick to make and you can add your own little flair to it any time!
- Last but certainly not least is an amazing Chicken Tortilla Soup
This recipe I actually learned during quarantine and have mastered over time. It was a huge hit by my significant other as well as my family. You’ll have leftovers for days but my only really big tip is to not put chips in the big batch of the soup itself but more into your personal bowl so that way the chips don’t get super soggy over time.
