Every year I come back to the Midwest and realize I will not eat a decent taco for at least two months. I am heartbroken every single year. But I pick myself up and look ahead, planning for when I will be able to feast again. Unfortunately, not all of my peers get the opportunity to experience a real street taco, so I will share with you some of my favorites in hopes that one day when given the choice between Taco Bell and Carne Asada, you will choose correctly.
1. I will start with a classic, Al Pastor. And if you ask where the cheese is you better stop reading this article now. Al Pastor is made with pineapple, chiles and orange, which come together (with many other spices) to make a colorful and beautiful dish.
2. Carnitas tacos may be more approachable for some, but if you are feeling even more adventurous I dare you to try Tacos de Lechon. Carnitas are made from pork, while tacos de lechon are made from a suckling pig. Basically a baby pig instead of a momma pig. Sorry.
3. Chorizo and egg tacos. Do not make me eggs if chorizo isn’t involved. Chorizo is basically seasoned ground pork sausage that can resemble pepperoni. But trust me, it is much better.
4. ACTUAL fish tacos. Yes, you have been lied to. Fried fish tacos are not the only fish tacos. I am a sucker for grilled tuna tacos, but if you ever get the chance to explore the wide world of fish tacos please try tacos de pejelagarto (garfish).
5. Finally tacos made of body parts. I saved the best for last. Tacos de lengua, tacos de tripa, tacos de cabeza etc. if you think it could be the inside of a cow it probably is, so you better try it.
