Recipes for Sweet Fall Treats

FALL IS HERE!!!! There is a certain sense of calmness whenever I think of the fall. I am not sure what it is about this weather but fall always gives me a serious sweet tooth. Having pumpkin spice lattes and banana nut bread almost every day got boring after a while, so I decided to give my mornings a little change with some homemade sweets! I just couldn’t think of a better way to start this wonderful season than with foods I look forward to eating! 

Blueberry French Toast

Ingredients:

8 eggs

3/4 cup milk

1 tsp vanilla extract

1/4 tsp lemon zest

1/2 tsp lemon juice

1/4 tsp ground allspice

1/4 tsp salt

8 think slices of whole grain bread

1/4 cup blueberries

This recipe is super easy to prepare! 

Preheat the oven to 350 degrees F. In a large bowl, whisk together the eggs, milk, vanilla, lemon zest, lemon juice, allspice and salt. Add the bread cubes and stir, make sure all of the cubes are covered in egg mixture. Let it soak for 5 minutes. Add in the blueberries into the bowl. Now put the the bread mixture into the muffin tins. Bake for 12 to 14 minutes, until the muffins are golden brown. This French toast and a fresh cup of coffee will have you ready to start your day!

Coconut Chocolate Chip Granola Bars

Ingredients:

3/4 cup butter, melted

1/2 cup brown sugar

2 eggs

2 tsp vanilla extract

2 cups whole wheat flour

1/2 tsp baking soda

1/2 tsp salt

1 package chocolate chips

1/2 cup unsweetened shredded coconut

Preheat the oven to 350 degrees F. In a bowl, whisk together the melted butter, sugar, eggs and vanilla until you see that the mixture is creamy and light. In another bowl, whisk together the flour, baking soda and salt. Slowly combine both bowls and stir. Mix in the chocolate and the coconut. But remember, don’t over mix or you’ll have tough bars! Put the batter into the baking pan and bake for 25 to 30 minutes. After the time is up, let the pan cool for a few minutes before lifting the cookie out and cut into 24 rectangular bars. Love love love these recipes for breakfast and even sometimes for a midnight snack.
