Avocado Toast Recipe with Poached Egg

Avocado toast is probably one of the healthiest things you can eat for breakfast. It leaves you feeling refreshed and healthier, and it tastes good! Below is a simple recipe for avocado toast.

 

(Serves 2 people)

Ingredients:

  • 2 eggs

  • 2 tablespoons of vinegar

  • 2 pieces of bread

  • 1 avocado

  • Salt and pepper

  • Balsamic vinegar

  • Feta cheese

  • Cherry tomatoes

 

Directions:

  1. Bring a saucepan full of water and 2 tablespoons of vinegar to a boil under a lid.

  2. Break eggs carefully into individual ramekins.

  3. Turn off heat and immediately add eggs gently.

  4. Set timer for 3-4 minutes for runny eggs and 4-5 minutes for medium. Keep the lid on the pan.

  5. While the eggs are poaching, toast the bread.

  6. Smash an avocado and season with salt and pepper.

  7. Use a spoon to remove poached eggs to a paper towel to drain. If they are a little underdone, put them back in the pan for about another minute or two.

  8. Slice some cherry tomatoes for later use.

  9. Top the toast with avocado, the poached egg, and the sliced cherry tomatoes. Sprinkle some more salt and pepper and feta cheese. The saltiness of the feta cheese goes really well with the avocado. Lastly, pour a little balsamic vinegar to maximize the flavor of the toast and enjoy!
