Listen, as a first-year living on campus, eating healthy isn’t easy. Not only might you have a two-semester contract for the dining halls at Florida State University (that don’t always provide the healthiest options), but you also have to plan around a communal kitchen and a shared mini fridge. Luckily, the easy recipes below should be able to make meal prepping a little easier.
1. Knock off Starbucks egg bites
Ingredients:
2 sticks of Celery
2 Carrots
1 cup of Egg Whites
½ cup of Cheese
2 slices of Bacon (any sort)
Nonstick Spray
First, dice your carrots and celery. Throw them onto a pan with butter, olive oil, nonstick spray, or whatever you prefer. In the meantime, cook your bacon in another pan. Cook your vegetables for about 10 minutes on medium-high heat and your bacon until you’re satisfied.
Then, throw the carrots and celery into the bowl. Rip apart your bacon and throw that into the bowl as well. Finally, pour one cup of egg whites and your half cup of cheese into the bowl. Mix it up and pour it into any type of pan. If you have a muffin tray, that would be the best at getting the “bite-sized” egg bites (but who has a muffin tray in a college dorm?). Throw it in any sort of pan you have, and remember, you can borrow one from the front desk. Bake it in the oven or air fryer at 350 degrees for about 30 minutes.
2. Peanut butter and banana sandwich
Ingredients:
Whole wheat Bread
Banana (can be taken from dining halls)
Peanut Butter
Simply take two slices of whole wheat bread and spread peanut butter on them. Then chop up a banana and add to each slice. There you go!
3. Overnight oats
Ingredients:
½ cup of oats
1 tablespoon of chia seeds
1 cup of any type of milk
Pour all ingredients into a jar and mix it up. Leave in your fridge overnight to let the chia soak up the milk. You can add fruit or chocolate chips for a sweeter finish!
4. chocolate-covered apple bites
Ingredients:
1 apple
½ cup of melted chocolate
Chop up the apple into disk-shaped slices (not cutting it in half at the beginning). Coat each apple slice in the melted chocolate and let them freeze for a couple of hours for a sweet, but healthier treat!
Sometimes it seems like you can only get your food from the dining hall and fast food chains around campus, but it’s easy to cook some cheap meals in the communal kitchen. Some of these items are available in the dining hall and the on-campus CVS, too!
