Pictured above are all the ingredients you need to create a crazy delicious sandwich, and guess what? It’s VEGAN.
What you need:
- 2 pieces of whatever bread you fancy (I used sourdough, but gluten-free is always an option!)
- ½ tomato, sliced
- ½ avocado, sliced
- Small handful of arugula
- A few slivers of onion (however much or little you desire)
- Hummus
- Pesto (either buy or use a recipe for cheese-free pesto, like this one here)
How to stack it:
- Spread hummus on one piece of bread.
- Add sliced avocado, tomatoes, onion and arugula.
- Take other slice and spread pesto on it.
- Stack second slice on first.
- Enjoy!
