I have a sweet tooth, so caramel popcorn is one of my favourite go-to snacks. This recipe is quick and easy to do, but you better hide it from your friends and roommates because I guarantee your treat will be gone before you have a chance to dig in!

 

Ingredients:

  • 1 cup of butter
  • 1 cup of brown sugar
  • ½ teaspoon of vanilla extract
  • ¼ teaspoon baking soda

 

Directions:

  1. Prep: Place aluminum foil over a baking pan and put popped popcorn in a large bowl.
  2. In a saucepan, melt the butter over medium heat.
  3. Once the butter is liquefied, add the brown sugar and whisk continuously. When the mixture is boiling (bubble, bubble, toil, and trouble) stop stirring and allow it to boil.
  4. After about 4 minutes, mix in the vanilla in and then the baking soda.
  5. At the 5-minute mark, remove from heat and drizzle over popcorn. Use a rubber spatula to evenly spread the caramel coating over the popcorn pieces.
  6. Transfer popcorn to a baking sheet and allow to cool.
  7. Serve and enjoy!
