Olive Oil Penne: This delicious pasta dish is made of whole wheat penne pasta, spinach leaves, cherry tomatoes, grilled chicken breast and is topped off with an easy-homemade olive oil sauce. To make the sauce get a to-go condiment cup, add olive oil + garlic powder + salt + pepper, put on the lid and shake and then pour over pasta!
Personal Pizza: Gluten-free personal pizza crust, sauce, and any toppings that your heart desires! If you’re lactose intolerant, here’s the perfect way to bring this glorious dish back into your life.
The “Beans-and-Rice” Remodel: In order to have a healthy diet it’s important to have variety. I used kidney beans, brown rice, black quinoa and sweet potatoes with lemon juice squeezed on top, but any blend of grains, beans and veggies can work to make a balanced dish of protein and carbohydrates!
Strawberries & Cream Dessert: Mashed up strawberries mixed with whipped cream and topped with strawberry slices, waffle pieces, and Teddy Graham bits. There’s fruit in it so that means it’s healthy, right?
Springtime Sip-Me-Up: ½ sparkling water + fresh-squeezed orange juice (two oranges) + fruit chunks of your choice (mine was kiwi) + 1 pack sugar (optional) + 1 bag of green tea (steep for 5-10 minutes) = yum!
Strawberry Chicken Salad: This simple dish is both light and delicious! Choose your favorite salad greens and then add sliced strawberries, nuts or granola and grilled chicken breast. Feel free to use whatever dressing you like, but I personally recommend a handcrafted dressing made of red-wine vinegar, olive oil, 1 packet of sugar and black pepper – it’s a perfect pairing!
