With the leaves shifting amber and the cool breeze wafting through the nooks of campus, it’s hard not succumb to the cozy, autumn vibes and indulge in seasonal treats. But if you aren’t feeling inspired (and have a kitchen), check out this recipe for apple cider cupcakes with buttercream frosting! Preparation was quick for both the frosting and the cakes, and they are dangerously delicious and definitely a crowd pleaser. Try ‘em out, and I can promise you will fall in love!
(Note: We replaced the cream cheese frosting with vanilla buttercream).
Cupcakes:
2 eggs, room temperature
1 2/3 cup flour
1 cup apple cider
2/3 cup sugar
1/2 cup butter, room temperature
2 teaspoons baking powder
1 teaspoon cinnamon
