Sunday Brunch: Easy 15-Minute Healthy Recipe

Spring break is over. Getting back into a routine wasn’t easy this week. I know I was quite overwhelmed with school work and playing catch-up with errands. All I want to do this weekend is relax and binge-watch one of my favorite series, Big Little Lies. If you haven’t had the chance to watch it – you should. It’s amazing and addicting. The series is only seven episodes, but every episode thus far was great. It’s on HBO and you can watch it On Demand. Either way, this weekend brunch wasn’t in the budget. I decided to write down an easy recipe I could make Sunday morning. I wanted to share it with you!

Scrambled Eggs, Avocado Spread, and Toast

This recipe is very simple. There is a minimal ingredient list. And, it only takes 15 minutes to make. 

What you need:

  1. Two whole eggs
  2. Two slices of honey/whole wheat bread
  3. Salt
  4. Pepper
  5. One small tomato (if you wish to add) 

You’ll need to scramble the eggs in a small pan on the stove top – medium heat. Using a toaster oven, heat the bread up to medium level. Only using 1/2 an avocado, remove the pit, and use a spoon to scoop out the middle. Use a fork to crush the avocado, add a dash of salt and pepper to the mixture. Once the toast is ready, spread the avocado on top first, add the scrambled eggs, and finish it with the slice of tomato (if preferred – not shown in the picture above.)

This is a great way to get all your healthy nutrients in one sitting. You can add a cup of mixed fruit to get a sugary flavor in the mix. My suggestion – mix blueberries, raspberries, and strawberries.
