Ingredients:
-1 1/2 cups all-purpose flour
-2/3 cup granulated sugar
-1 1/2 tsp baking powder
-1/4 tsp salt
-1 large egg
-2 large ripe bananas, mashed
-1 stick butter
-1 tsp vanilla extractÂ
-1/4 cup 2% milk
-1 cup semi-sweet chocolate chipsÂ
-1 cup chocolate chipsÂ
Directions:
- Preheat oven to 425 degrees.
- Melt butter in a large mixing bowlÂ
- Add sugar, baking powder, salt, mashed bananas, egg, vanilla, and milk in the mixing bowl with the melted butter. It’s okay to leave chunks of banana in the batter.
- Add flour and 1 cup of chocolate chips.
- Stir gently with a wooden spoon just until combined.
- Don’t over mix batter.
- Spray 13 muffin tins with cooking spray.
- Spoon batter evenly into each muffin tin.
- Sprinkle additional chocolate chips over top of each muffin.
- Bake at 425 degrees for 5 minutes.
- Reduce temperature to 350 degrees.
- Continue baking an additional 20 minutes or until a toothpick comes out clean.
- Cool and enjoy!
