Every Thanksgiving I make a dessert. As the only vegan in my household, I cook up some signature side dishes every year along with a treat. I usually go for something pumpkin but this year I decided to switch it up.
I have to credit this recipe to YouTuber Emma Macdonald. I’ve seen her and her friends rave about it, and have been meaning to try it for myself. Needless to say, I’ve been missing out. I followed the simple ingredients list and recipe off of her YouTube video, and, not to toot my own horn, but it was a complete success. My entire family loved it.
It’s safe to say I’ll be making this recipe all holiday season long…
Ingredients:

3 ripe bananas

GF flour
-
Oat flour
-
Maple syrup
-
Coconut oil
-
Vanilla extract
-
Baking powder
-
Baking soda
-
Cinnamon
-
Salt
-
Vegan dark chocolate chips
Recipe:
1. Mix wet ingredients in a bowl.

Bananas

¾ cup of maple syrup

½ cup of melted coconut oil

1 tsp of vanilla extract
2. Mix dry ingredients in a separate bowl.

1 cup of GF flour (could be regular, coconut flour, almond flour, chickpea flour, etc.)

1 cup of oat flour

1 tsp baking powder
-
1 tsp baking soda
-
1 tbsp of cinnamon
-
½ tsp of salt
3. Mix dry and wet ingredients.
4. Add in the vegan dark chocolate chips (as much as your heart desires).
5. Grease a pan with vegan butter or coconut oil.
6. Bake at 350 degrees for 35-40 mins (I did 40 and it ended up a bit gooey –– still incredible –– but if you want a more bread-like consistency I’d potentially bake for longer).
