Perfect for a cold day…
You will need:
Filling
10 apples (4 diced into small chunks and 6 grated)
100 g caster sugar
2 tsp cinnamon (or to taste)
Crumble
100 g plain flour
100 g rolled oats
35 g unsalted butter
Method:
Preheat the oven to 190C/375F/gas 5.
Filling
- Dice 4 of the apples and set aside.
- Take the remaining 6 apples and grate them.
- Using a large frying pan to, on a low heat, start to caramelise all the caster sugar. Don’t stir – just let it do its thing!
- As soon as the caramel reaches an amber colour, add the grated apples and cinnamon and stir.
- Now add in the chunks of apple and allow them to soften.
- Tip the mix into an ovenproof baking dish (or roasting tin as used below – *student hack*).
Crumble
- Place the flour and oats in a mixing bowl and mix well. Chop the butter into small cubes and add this to the flour and oats.
- Gently rub the mix until it resembles a crumb texture.
- Then cover the fruit with the crumble mixture.
- Bake for around 30 minutes, or until golden.
