With me being vegetarian and my boyfriend being a lover of meat it’s sometimes hard to find meals that we can cook and eat together and both equally enjoy. One of the best crowd-pleasers so far is Veggie Curry!
Ingredients:
100g Lentils
1x Vegetable stock cube
2 Tbsp of Mild Curry Spice
3 x Sweet Potatoes
1x Red onion
2x Garlic Cloves
1x Pepper
1x Tin of Chickpeas
1 x Tin of Chopped Tomatoes
Any other veg of your choice i.e. Broccoli, Kale, Spinach
Method:
- Add lentils and stock cube to a pan of boiling water
- Chop up sweet potato, onion, pepper and garlic
- Add to pan after 15 mins of the lentils boiling
- After another 10 mins add the Curry spice
- Once the lentils and veg are nearly cooked, add any other veg that requires boiling (something like carrots require a longer cooking time whereas spinach doesn’t need to go in till the last minute)
- Add chickpeas and chopped tomatoes and stir
- Serve with rice or pitta bread
