3 Quick and Easy Weeknight Dinner Ideas

As a college student, it is difficult to find quick and easy dinner ideas. But just scrolling through TikTok and Instagram I have found some of my favorite recipes! Here are my top 3 favorites!

1. sheet pan meals

Sheet pans are super easy to make, and healthy too! First, I preheat my oven to 350Âş and prep my food.

I usually like to add Trader Joe’s chicken sausage to the pan as well as many veggies, including: zucchini, onions, tomatoes, broccoli and cauliflower, (and sometimes potatoes).

Helpful hint: Before adding the potatoes, in a separate bowl mix a little bit of oil, garlic, salt and pepper to add extra flavor…so yummy! If possible, make extra to add to salads and also leftovers for the next day! 

2. Pasta salad

This recipe I found on instagram from Katie Austin. This is one of my favorites!

The ingredients are: ground turkey, zucchini, broccoli, pasta and mozzarella cheese. First I cook my ground turkey in a pan then boil my pasta. Then, I sautee my zucchini and broccoli together with light oil, salt and pepper. Next, combine all the ingredients, stir together and top with cheese! 

3. teriyaki chicken salad

Recently, I’ve been loving this yummy and healthy chicken salad! At Trader Joe’s I buy the pre-packaged veggie mix called Healthy 8. This is a great mix of chopped broccoli, carrots, bell pepper and more! 

I add chicken on top which I usually cook in the Trader Joe’s Soyaki sauce. I also buy the butternut squash zig zags from Trader Joe’s, and fry them in the air fryer for about 12 minutes. I usually add green goddess or light Italian dressing to my salad. Super yummy and light!
