Happy almost Thanksgiving, everyone! I’ve rounded up some vegetarian recipes for you all to check out – if you have some time to kill, you can give one of these a try! Just click the names of the dishes to be linked to the recipe.

Appetizers

1. Mini Cranberry Brie Tarts

With just three ingredients (a phyllo cup, cranberry sauce, and brie) you can make an easy and sweet appetizer!

2. Crispy Cheese Twists

In my opinion, no meal is complete without cheese. Make your own cheese twists from scratch in under an hour with this recipe!

3. Cucumber Sandwiches 

In twenty minutes, you can make these tiny, simple sandwiches for your guests to snack on!  

Main Dishes

1. Roasted Butternut Squash Risotto

This risotto recipe calls for brown rice instead of white, so you can kick off your Thanksgiving with something healthy and delicious!

2. Spinach Artichoke Lasagna

The trick to this recipe is cottage cheese instead of ricotta for better flavor and texture! I’m definitely thinking about creating this one for Thanksgiving with my family!  

3. Sweet Potato Casserole

Honestly, I took one look at this photo and knew I needed to try it. Fair warning: if you’re going to add the breadcrumbs, make it a day ahead. Without breadcrumbs, set aside three hours for this recipe!

1. Mashed Potatoes

A well-known classic! You can find plenty of recipes for mashed potatoes, but this recipe uses substitutes like soy milk and vegan margarine, but you can definitely choose to use alternatives!

2. Roasted Pumpkin with Feta and Honey

This can either be a side or a main dish, and can be served either hot or cold. Either way, it looks great!

3. Balsamic Roasted Brussel Sprouts

For this, all you need is your oven, some brussel sprouts, salt, balsamic vinegar, olive oil, salt and pepper!  

Soups

1. Roasted Butternut Squash Soup

.For this recipe, you need butternut squash, olive oil, shallots, garlic, vegetable broth, maple syrup, butter and nutmeg. This soup will be the perfect accompaniment for the rest of your meals.

2. Pumpkin Soup

A fall staple, make your own pumpkin soup with canned pumpkin puree, (soy) milk, onions, and nutmeg in just fifteen minutes!

3. Vegetarian Vegetable Stew

If you’re looking for something really filling and varied, this is the recipe for you! There’s quite a handful of ingredients in here, but you could probably add more if you wanted to!

Salads

1. Herbed Quinoa and Chickpea Salad with Lemon-Tahini Dressing

This recipe packs protein, fiber and flavor. Definitely a must-have for your Thanksgiving table!

2. Spinach and Mandarin Orange Salad

This salad can be made in just about five minutes, which is essential for that busy college student lifestyle if you ever want to replicate it!

Desserts

1. The Ultimate Cheesecake

 It’s been noted that the allotted baking time is not enough and should be extended, but the finished product is supposedly just as good as it claims to be!

2. Chai Carrot Pie

If you’re a fan of Starbucks’ soothing Chai Latte, this recipe is worth checking out!

3. Miso Caramel Apple Pie

Add a twist to a Thanksgiving classic! While this definitely takes some time to prepare, the payoff of a rich, salty-sweet pie is worth it.
