Peach and Raspberry Summer Celebration Smoothie

As exams finally draw to a close, we can all breathe a sigh of relief.  Summer is here, and the time for celebration has arrived. The weather is (mostly) nice, and we can relax in the sun without a care in the world.  This smoothie will keep you nice and cool in the heat of June, and is one of the quickest things to make if you’re in a hurry!

Ingredients

340g frozen raspberries (£2.00p for 150g from Tesco’s)

255g fresh peaches (0.49p for 4 from Tesco’s)

85g Greek yoghurt (£1.00p for 500g from Tesco’s)

170g almond milk (£1.80p from Tesco’s)

Useful Tips

  1. Use ripe peaches.  They need to be soft to the touch.  Otherwise your smoothie will be sour.  
  2. Freeze the raspberries in advance so they can be used immediately in your smoothie
  3. Instead of yoghurt and almond milk, you can use a good quality white wine to spice it up a bit!

Method

  1. Leave some raspberries aside and place the rest in the freezer.  Freeze completely.
  2. Slice the peaches and place all the ingredients, including the raspberries, in the blender.
  3. Blend until smooth.
  4. Pour into a glass and serve with fresh raspberries on top and a slice of peach.

It’s as simple as that, and it includes two of your five a day!  You can drink as much as you like and still be healthy.  Next time you’re chilling in the sun, remember to make this drink to keep the heat at bay.  Congratulations on finishing your exams – let’s raise a glass and toast to a long and relaxing Summer.  Enjoy!
